The cuvée No Milk Today is made from Savagnin, whose average age is 40 years. After manual harvesting, the totally destemmed grapes are fermenting for 15 days. Aging lasts 6 months in stainless steel tanks. The style is slightly oxidative and combines minerality and delicacy of buttered apples and hazelnut. With this wine, no need for milk!
